Do I need to worry about any climate issues when installing laminate in a kitchen in a dry environemnt??

The laminate should be fine to use. I recommending using a humidifier in a dry environment to ensure that it doesn't skrink up. That said, it's more resistant than hardwood and bamboo to shrinking.
