What types of flooring do you prefer around a pool deck in very hot, humid climates near the ocean? I would like something with a non slip surface that is impenetrable by liquid. I would prefer something that is available in several different shades of blue.

You could do a high grade porcelain tile.  Get a textured surface that won't be slippery.  You could also stain concrete blue and even stamp it to look like a tile or brick pattern.
