I have an old cat that has accidents around the house. We have decided to install bamboo flooring. What is the best installation method to protect it from accidents and should I use a vapor barrier?

Yes, use a vapor barrier to prevent the accidents from ruining the subfloor if they leak between the boards. Gluing the seams will also help but be careful as this may void your warranty. It is very important that you clean accidents asap as there is no way to completely pet-proof bamboo flooring. Good luck with your installation!
