I want to lay concrete and alter it to create a brick appearance for an outdoor walkway. Can someone explain this process to me?

RE: concrete for outdoor walkway
You first would create the form for the walkway and then lay the concrete.  You then use stamp to imprint the brick pattern into it before it fully cures.

How would I protect the concrete in case of rain?

as long as it doesn't get too cold, all you should need are tarps.  It's best to plan the installation on a dry weekend.
