I’ve heard of using salt water pellets in the surface of concrete and then dissolving them once the surface has dried creating a texture in the surface. I would like to try this in my barn and was hoping someone could help walk me through it. Also, how does this type of texture feel underfoot? I want good traction but I don’t want it to be painful.

It won't be the most comfortable choice underfoot, but if you use smaller pellets and don't push them too far in the surface. The further that you push them, the deeper the indents will be and the less comfortable.
