We have extra laminate leftover from our basement installation that we have decided to continue into the bathroom despite warnings about pooling water. The bathroom is rarely used so it should not be a major issue. My questions is – what precautions can I take in this room (for example, should I use a specific sealant or caulk around edges, etc)?

You may choose to glue to seams or caulk the edges.
