You may want to look into cork or linoleum flooring. I know that Forbo (maker of Marmoleum) puts a lot of research and care into making sure their products and methods are eco-friendly.

I agree with DIYer. Porcelain tiles are an excellent choice as you will have a product that is environmentally friendly and permanent. You will have to take care as dropped utensils may break or damage the floor. Also the floor could be a little uncomfortable in cold climates.
