We had our thick drapes closed in our vacation house while we were away for 6 months and our linoleum floors turned a slightly yellow color. I've been told that this is due to sunlight deprivation. Is this true and is there any way to return it to its color?

Yes, it's true that this is due to sunlight devrivation. The only way for it to return to it's natural color is to give it exposure to sunlight. Don't try using harsh cleaners like ammonia, as they won't work.
