I just had new vinyl installed in my kitchen yesterday, a friend of ours laid it so I don't want to question him, but there are bubbles all over the floor! What should I do? Is this even fixable?

Not to worry, usually these bubbles will be gone within 72 hours. This is caused by the adhesive "off-gassing." Simply put, as the adhesive dries, it emits gas. The gas will usually dissipate within the aforementioned 72 hour window. It could be that a little more open time would have minimized the bubbling, but wait a few days and lets see what happens.
